If God already knows the future, and knows what's going to happen, and it won't change, then why do we pray for stuff? How does prayer work?

If a person was once a Christian but when they are older they fall away and live a worldly life, what happens to them for eternity?
What if [someone] said "that prayer" and then didn't ever return to a life of Christianity? What does that mean? Does the prayer mean anything? Would that make them a Christian?
What happens to people when they die?
After people die, do they go straight to heaven or do they stay in their grave and nothing happens until the rapture and then everyone goes to heaven?
